This week’s chat was a fun little tour of the Farm Store. If you’ve been lurking and thinking of coming in, catch a preview of what you’ll find when you get here!

Because two Kristins are better than one.

Kristen Bowler is the Farmer’s wide, owner, and personality behind Utah Natural Meat & Milk. She is an incredible resource for recipes and lifestyle tips and is in out of the store during hours and answering the phone and emails off hours.

Kristin Whitaker, moi, is the store manager. I am most often behind the register and available for nutritional counseling in store or after. Also helping on register (not shown) are my kids who work in the store. Damon, Tayler, Becca and Zaida all take turns manning register and helping customers. Feel free to put them to work when you’re in! ;)

2:00 How To Get Here

I get a lot of calls from people who are close but can’t quite find their way to the store.

The address is 7400 South 5600 West, West Jordan Utah

There isn’t an actual sign on our drive though (weird city code) so just know when you’re coming off 7800 or 7000, we’re on the East side of 5600 West. You can easily see the big red barns off the side of the road (not to mention the cows!) and there’s a little paved drive that turns into a gravel lot. That’s us.

Most people will park along the front of the store. You are welcome to walk around and look at all the animals during store hours. Kids love to pet the calves. In fact, if you come on Saturdays at 11:00 (weather permitting) they can even help us bottle feed out baby cows. Fun stuff!

3:15 Pastured Pork

Where did “the other white meat” come from? Did you know real pork is red? Our pork is pastured start to finish and are never given antibiotics, hormones, or inferior food. They have room to root and roam and roll in the mud. You will notice the difference.

We have our own in house butcher shop where our butcher, Wally, expertly prepares, cuts, and wraps everything.

3:40 Beef: Corriente and Angus

We raise and sell two breeds of beef. What’s the difference?

Angus

is the breed most of us are familiar with in a beef cow. They have been bred for size and have nice marbling throughout. Ours are raised on pasture and eat grass start to finish. They will be leaner than a conventional corn fed cow, but if you are after fat, Angus is the breed you want.

Corriente

is a heritage breed from Spain. They are about half the size of Angus which is why a half of a Corriente will cost half as much as half of an Angus if you do a bulk order. (Same price per pound.) Corriente are a perfect breed for grazing in drier habitats. They take longer to mature, which gives them a fuller flavor and they are also leaner than Angus. It cooks similarly to Elk, as far as fat content goes. With the steaks especially, you want to be careful not to overcook them or it can be a little tough. But with a little care, you’ll have the best steak you ever tasted. Customers who choose Corriente like the richer flavor it offers.

5:03 Sensational Salmon

Wild caught in Bristol Bay, Alaska and flash frozen before being sent directly to us by Kwee Jack Fishing Co. You really won’t find better tasting salmon anywhere! It is sold by the the filet in the store for $15.75 a pound or you can order it by the 20lb case for $13.75 a pound. We generally have it in stock year round, though sometimes there is about a month between when we sell out of last year’s catch and get next year’s catch in again.

5:29 Fats and Organs

We have beef and pork fat available for you to render, or you can purchase it already rendered in our store.

Fats are $3/lb raw. Rendered fats (Tallow and Lard available) are $9.50 a quart.

Odds and Ends:

We sell all the organs we are legally allowed to have. If it is not listed, there is a regulation that prevents us from carrying it. In the store you will find:

Beef—liver, heart (usually ground), and kidney. Also, cheek, tongue and ox tail

Pork: liver, heart and kidney

Lamb: Liver, heart and kidney

Chicken: feet, liver, heart, necks, heads

Note that some people consider these scrap pieces but they are actually valuable for their nutrient density and in high demand in our store. Because of limited quantites (a cow only has one liver!) we often run out. Just be patient and feel free to ask us when it will be back in stock.

5:47 Kefir and Yogurt starts

The perfect companion to our raw milk! We have kefir starts raised in raw milk and ready to go and the world’s easiest yogurt, it ferments right on your countertop at room temperature for a delicious and creamy RAW yogurt. Both these are perpetual, meaning you buy them once and they go indefinitely. A booklet of directions is available in the store, with purchase.

We raise a heritage hair breed rather than a wool sheep and you can taste the difference!

6:27 When do we stock?

It’s important to know that we’re not a large scale operation, we’re a small farm. This means we don’t have a regular schedule and we are constrained by what’s best for the animals, their growth patterns and circumstance. If the chickens aren’t big enough, we don’t butcher. If we sold out of bacon but still have piles of roasts and chops, we won’t slaughter another pig because people want bacon. In the winter, we don’t raise chickens at all because they don’t do well in our Utah climate. We do our best, but aware that things aren’t as “on demand” as you find in larger, commercial operations. In the end, you get a better product, ethically produced. If we are out of what you’re looking for, take the opportunity to try something new. And if you keep coming, you will get what you what you want.

8:32 Primal Porridge

This is a UNM original! A hot, instant breakfast for those eating a grain-free lifestyle. Not only is it delicious as a hot bowl of porridge, but you can play round and make pancakes or even muffins and cookies with it. We really can’t get enough! Sold in 12 serving bags or a single serve size.

9:23 Vital Proteins

Though not a local company, we have called and talked to them and they meet our standards for quality and ethics. We carry their collagen, bone broth powders, gelatin and liver capsules (a great alternative for when we are out in the store!)

10:29 Soap and deodorant

Check back regularly to see what local, artisanal products we carry. Right now we have a beautiful soap made with our very own tallow and a local made deodorant that will keep you smelling fresh without any harmful additives.

10:50 Lakanto

Satisfy that sweet tooth without blowing your diet! We carry a line of Lakanto products: a versatile sweetener made from monkfruit with no funky aftertaste. Come chat with us about how we use it in our own homes!

11:15 Raw Cheeses

We wish we could find a local, raw cheese dairy. But we did the next best thing and found Coulter Farms in Honey Grove, Pennsylvania. They are a family run farm that uses certified organic milk, 100% grass fed and raw (except for the Mozzarella). Try any of the cheddars, baby swiss, gruyere, gouda and more!

12:00 Miscellaneous

We have UNM seasoning blends, local raw honey, local balms made with beeswax and other assorted items. Chances are, if it is in our store it is one of our favorite things we use everyday!

13:32 Bulk Orders

Utah Natural Meat offers great pricing everyday in the store, but by far the best value you can find anywhere is to order in bulk from us. We do bulk orders once a month where you can buy beef in shares from 1/8 to a whole cow. We also have Pork in half or wholes, Whole Lamb, and Salmon in bulk. We have recently begun offering a monthly Farmer’s Choice box for those who would like a sampling. Cilck here to see when the next order is due. We do orders roughly once a month, year round so there is never any pressure to get yours in. You can place your order in store, by phone, or online anytime.

13:50 Doterra

We carry doterra products for less than retail. Don’t see what you want? Let us know and we will see if we can get it in. We also love diffusing doterra in the store.

14:11 Dem Bones

We have an entire freezer dedicated to bones of all kinds and people flock for them because word is out: Bone broth is a super food. Whether you want beef, pork, lamb or chicken you can get them for only $2 a pound. I’ve never seen a better price anywhere!

15:00 Eggs

The best eggs are farm eggs. Free range, never fed GMOs, corn and soy free, no added hormones, all the bugs they can forage. Happy chickens lay better eggs $5 a dozen.

16:35 Sourdough Bread

Abigail’s Oven is a beautiful bakery that delivers fresh sourdough bread on Tuesdays and Saturdays. They bake real sourdough in dutch ovens with clean, simple ingredients. We carry country white, whole wheat, cinnamon swirl, Jewish rye, jalapeno cheddar and half size loaves. It is gut friendly and delicious!

17:15 Chicken and Turkey

We are the only farm we know of in the state that raises free range chicken. We butcher on site so we can guarantee quality from start to finish. Never fed GMOs, corn or soy, hormones or antibiotics. They grow up on pasture and feast on fresh sprouts everyday. Because they don’t grow well in the winter, we don’t have chicken year round. But come enjoy a summer favorite available through the fall.

Turkey is available beginning the end of October through Thanksgiving and you really can’t find a better bird! We do not take pre-orders, it is first come first serve.

18:50 Milk

Beautiful raw milk in all its glory stocked on the shelves for you and yours. We milk on site, it is chilled and bottled and travels all the way from the barn, across the parking lot to the store. You can’t get much more local than that! It is not heat treated in anyway or homogenized so you get the nutrition in tact, the benefit of raw enzymes and beneficial bacteria, and all the health benefits of a super food. Drink it straight or make cheese, yogurt, kefir, and any number of amazing dishes with it. The fresh sprouts our cows graze on give our milk a clean, bright quality you won’t find anywhere else.
